You don't have to throw away the scraps / bottom of your Napa cabbage. With a little water, light, and patience, you can encourage the leftover base to produce new leaves and roots. This works with Napa cabbage and can also work with other head-forming vegetables such as regular cabbage, bok choy, and some types of lettuce.

The easiest way to try it is right on your kitchen counter. All you need is the cabbage base, a plate or shallow dish, and water.



How To ReGrow Napa Cabbage



What You Need

You will need a fresh Napa cabbage, a clean knife, a shallow plate or dish, and water. A sunny windowsill or another bright location is also helpful.




Step 1: Cut the Base

When you are finished using your Napa cabbage, save the bottom portion where all of the leaves were attached. Leave about 1–2 inches of the base intact.

Make a clean cut across the bottom. Try not to cut away the central growing area because that is where the new leaves will develop.




Step 2: Put It in Water

Place the cabbage base cut-side down on a shallow plate.

Add enough water to cover only the bottom of the base. You do not want to completely submerge the cabbage. About ½ inch of water is generally enough.

Put the plate somewhere that gets plenty of natural light. A bright kitchen windowsill works well.






Step 3: Change the Water


Replace the water every couple of days. This keeps the water fresh and helps prevent the base from sitting in stagnant water.

You should start seeing new growth from the center within several days. Cabbage can begin producing new growth in roughly three to four days, although the exact timing depends on the condition of the base and the growing environment.

At first, the new growth may look like small green leaves emerging from the middle. You may also eventually see small roots developing underneath.




Step 4: Let It Grow

Once you see new leaves, continue giving the cabbage bright light and fresh water. The goal at this stage is not necessarily to grow an entire new supermarket-sized head. The base is using stored energy to produce new shoots, and the amount of growth you get will depend on how much viable tissue remains.

If you want to keep the plant growing for longer, move it into soil once it has developed roots.



Step 5: Plant It in Soil



Once roots have started developing, transfer the cabbage base into a container filled with quality potting soil or directly into your garden.

Make a small hole and place the rooted base into the soil, covering the roots and lower portion of the base while keeping the new center growth above the soil.

Water it thoroughly after planting.


Cabbage grows best in fertile, well-drained soil with consistent moisture and plenty of sunlight. Traditional cabbage generally needs about 12–18 inches of space between plants, while Napa cabbage is commonly planted about 10–12 inches apart, depending on the variety and desired head size.


If you are moving a plant grown indoors outside, gradually expose it to outdoor conditions rather than putting it directly into intense sun, wind, or extreme temperatures.


Caring for Your Regrown Cabbage


Once it is planted, treat it like a normal cabbage plant.

Keep the soil consistently moist, but avoid leaving it waterlogged. Cabbage needs regular moisture while it is growing, and inconsistent watering can contribute to poorly formed or split heads.

Give the plant at least six hours of direct sunlight each day. Cabbage is a cool-season crop and generally performs best in cooler temperatures rather than extreme summer heat.

Cabbage is also a heavy feeder, so growing it in fertile soil with plenty of organic matter can help support healthy leaf production. Depending on your soil, a vegetable fertilizer or additional nitrogen may be useful during the growing season.

Keep an eye out for cabbage worms, caterpillars, aphids, and other common cabbage pests. Check the leaves regularly and remove pests by hand when possible.


When to Harvest


If your regrown cabbage develops into a proper head, harvest it when the head feels firm and well-filled. Napa cabbage commonly reaches harvest size in roughly 60–70 days from a transplant, although the timing varies by variety and growing conditions.

Use a sharp knife to cut the head at the base. Harvest promptly once the head is mature because leaving mature cabbage in the garden too long can increase the risk of splitting or other problems.

You can also harvest individual young leaves if you prefer to use the plant as a source of fresh greens rather than waiting for another full head.


How It Works: Why Can a Cabbage Grow Again?


The reason this works is that the bottom of the cabbage is not simply a piece of dead vegetable tissue. It contains living plant tissue, including cells associated with the plant's growing points.

Cabbage is a plant in the Brassicaceae family and is a leafy crop that forms a dense arrangement of leaves around a central growing point. When you cut away the edible portion, the base can still contain living cells capable of producing new growth.

The center of the cabbage contains meristematic tissue.


Meristems are regions of actively dividing plant cells that allow plants to produce new leaves, stems, and other structures.



When the cabbage base is placed in water, it continues carrying out basic biological processes even though it has been separated from the rest of the plant. The remaining living tissue has access to stored carbohydrates and other resources that were already present in the plant.


Water is absorbed through the remaining tissue, and the plant's cells continue to function. With enough light, the new leaves can begin developing and eventually carry out photosynthesis, allowing the growing tissue to produce its own sugars from carbon dioxide and water.


This is why the new growth is coming from the center rather than randomly appearing along the outside of the cabbage. The plant is using an existing growing point to produce new tissue.


What About the Roots?


Roots can sometimes develop from the base as well. This is called adventitious root formation, meaning roots develop from plant tissue other than the primary root system.

The cabbage base has been separated from its original root system, but under favorable conditions, some plants can respond by producing new roots from surviving tissues.


Water helps keep the remaining tissue hydrated while the new growth gets started. Once roots develop, the plant has a much better chance of transitioning into soil and continuing to grow as a plant. University of Nevada Extension specifically recommends moving regrown cabbage into a potting medium once roots begin developing.


Why Does Light Matter?


Light becomes especially important once new leaves begin forming.

The first new leaves are relying heavily on resources already stored in the cabbage base. As those leaves develop, they can begin photosynthesizing. Photosynthesis allows the plant to use light energy to convert carbon dioxide and water into sugars that provide energy and building materials for continued growth.

This is why placing the cabbage somewhere bright is helpful. Without enough light, new growth may be weak, pale, or stretched.


Why Does Changing the Water Matter?


The cabbage base does not need to sit in deep water. In fact, keeping the entire base submerged is more likely to create problems than help.

A shallow layer of water provides moisture to the bottom of the cutting while allowing much of the plant tissue to remain exposed to air. Changing the water every few days also keeps the setup cleaner and reduces the chance of the stagnant water contributing to decay. University of Nevada Extension recommends using only about a half-inch of water and replacing it every few days.


Does This Mean You Get an Unlimited Supply of Cabbage?


Not necessarily.

Regrowing a cabbage base is a form of vegetative propagation, but it is not the same as growing a brand-new cabbage from seed.


The leftover base has limited stored resources. It can produce new leaves and sometimes roots, but whether it eventually produces another full head depends on the plant variety, how much viable tissue remains, the condition of the cutting, light, temperature, nutrients, and growing conditions.


Once the plant has roots and is growing in soil, it has access to water and nutrients from the growing medium and can continue producing new tissue.

So think of the countertop method as a way to restart the plant and observe new growth rather than a guaranteed way to produce an endless supply of full-size cabbage.




The Simple Version

Save the bottom of your Napa cabbage. Cut it cleanly, leaving about 1–2 inches of the base. Put it cut-side down on a shallow plate with about ½ inch of water. Place it somewhere bright and replace the water every couple of days.

After a few days, look for new leaves coming from the center. Once roots begin developing, plant the base in moist, well-drained soil. Give it plenty of light, consistent water, nutrients, and enough space to grow.

With the right conditions, that cabbage scrap you were about to throw away can become a new growing plant.
