Francesca Nardelli : Switching to A Fully Plant Based Diet Changed My Life

Updated: Sep 29

If there’s one thing I’m totally okay being dramatic about, it’s this: I’m head-over-heels, no-turning-back in love with eating plants. Not sometimes. Not when it’s convenient. Only. Plants.

And no, it’s not a phase. It’s not for aesthetics. And it’s definitely not boring.

Only Plants, But Make It Everything

When people hear “plant-based,” they often imagine sad lettuce and a quiet life. Meanwhile, my plate is having a dance party. We’re talking caramelized mushrooms, smoky lentils, roasted garlic hummus with a swirl of basil oil, and a sauce that has no business tasting that good.

I’m not sacrificing flavor — I’m swimming in it. It’s like discovering a whole new language of taste, one that speaks fluently in citrus, spice, crunch, creaminess, and color.

Only eating plants doesn’t mean less joy — it means more creativity. More color. More “wait… what’s in this?” moments. And honestly? I live for those.

You don’t have to be perfect. You don’t need a label. But you can be a fan.

It’s Not About What’s Missing

Everyone always asks: “Don’t you miss cheese? Or meat? Or ____?”And here’s the truth: Not really. Because what I’ve found is way better.

I’m not focused on what I’ve given up. I’m obsessed with everything I’ve added in — fresh herbs, bold spices, creamy nuts, crunchy seeds, rainbow veggies, sprouts on sprouts on sprouts.

Eating only plants doesn’t mean I’m limited. It means I’ve curated a menu that actually makes me feel good. That fills me up and fuels me without leaving me heavy, tired, or wondering what mystery ingredients just walked into my digestive system.

So Yeah… I’m a Fan

A fan of slow-roasted tomatoes and spicy tahini drizzle. A fan of broccoli sprouts on everything.A fan of food that energizes me instead of draining me.

This lifestyle isn’t a trend. It’s not a diet. It’s a devotion — to real ingredients, to thoughtful choices, to flavor that shows up and shows out.

So if you’re wondering if you should try it — if you’re curious, if you’re craving something new, if you’re ready to feel better in your body — this is your little nudge.

There’s room in the fan club for you, too.
