This tofu poke bowl takes inspiration from classic poke flavors but swaps heavy sauces for naturally fermented, probiotic-rich ingredients that bring the same umami depth with extra benefits for your microbiome and skin.


Ingredients

(Serves 2)

For the bowl


  • 1 cup cooked sushi rice or brown rice

  • 1 cup cubed extra-firm tofu (pan-seared or air-fried until golden)

  • ½ cup diced cucumber

  • ½ cup shredded carrot

  • ½ cup pickled or fermented daikon or kimchi

  • ¼ cup thinly sliced red cabbage

  • ¼ avocado, sliced or cubed

  • 1 tablespoon sesame seeds

  • ¼ cup sprouts or microgreens

  • Optional: nori strips, edamame, or mango for brightness


For the dressing

  • 1 tablespoon miso paste

  • 1 tablespoon rice vinegar

  • 1 teaspoon tamari or coconut aminos

  • 1 teaspoon maple syrup

  • 1 teaspoon sesame oil (optional)

  • 1 tablespoon water


Whisk together until smooth and glossy.


How to Build It

  1. Prep the tofu. Pat the tofu dry and cube it. Pan-sear in a nonstick skillet until golden on each side. For more crispness, air fry for 10 minutes at 400°F.

  2. Assemble the base.Add your rice to the bowl and layer the tofu on top.

  3. Add your color and crunch.Arrange the cucumber, carrot, cabbage, avocado, and fermented vegetables neatly in sections. Sprinkle sesame seeds and add sprouts for a fresh finish.

  4. Drizzle and enjoy.Pour your miso dressing over the bowl and let it soak slightly into the rice. Eat immediately for the best texture and flavor.
